Hola Peeps! I hope that you are starting your Friday off right!
I don’t know about you, but I am super glad that it’s Friday. I don’t have any huge plans this weekend, other than working, so I have a few things that I want to get caught up on.
- Wash my car. Um, I can’t even describe the dirt that is on it right now.
- Dig out all of my Nicholas Sparks books. You might wonder why I would put this on a list, but trust me, I need to write it down.
- clean out the fridge
- organized my closet. This seems to be a regular occurrence.
- Dust. Ugh.
- get rid of some of the pictures on my media page. Too many!!
I am sure there will be other things added to the list.
I know that there may not be a lot of fans of the word “casserole” but I actually really like them. This Taco Casserole is probably one of my favorites, but I haven’t made it in a long time. It’s super easy and super quick to make, with just a few ingredients.
Taco Casserole Recipe:

- 2 cans of the reduced fat croissant dough
- 1 can of fat-free refried beans
- 1 can of no salt added tomato sauce
- 1 packet of taco seasoning
- 1 pound of turkey meat
- 1/4 cup of water or more
- 1 cup of shredded cheese
Directions
Pre-heat oven to 350 degrees
Open one can of the croissants and place (still together) in the bottom of a 9×13 pan
Brown turkey meat in skillet
In a large mixing bowl, mix the refried beans, tomato sauce, and taco seasoning together and then add this mixture to the turkey meat and keep over heat until warm. This is where you will need the water.
Pour meat mixture over the first can of croissants, already in the pan.
Add one cup of shredded cheese over the meat mixture
Take second can and place over the meat and cheese
Bake until top is brown
I am not really all that great at writing out recipe directions, but this recipe is to easy to mess up.
You can really do all sorts of things with it.
This little casserole was also my lunch today!
Afternoon snack:

1/2 banana with some dark chocolate dreams nut butter
Dinner:

I had a wonderful smoothie while I was catching up on some great blog reading!! Hey Maren!!!
- 1/2 frozen banana
- 1 cup of frozen cherries
- 2 tsp of chia seeds
- 2 scoops of Visalus
- 1 cup of Almond milk
325 Calories total
Bob Harper was on the Revolution show yesterday! Did anyone catch it?? He has this new book out called, “The Skinny Rules.” I think that I just might purchase it. Here are some of the rules that he discussed on the show:
- Drink are large glass of water before every mean. He also recommends putting one on your nightstand so that when you wake up you can have your first glass!
- Don’t drink your calories. This one wasn’t mentioned on the show, but it is a good one and one that I struggle with. Specialty coffees.
- Eat protein at every meal.
- Eat apples and berries every single day! (fiber)
- Go to bed hungry
- Plan one splurge meal a week

Breakfast:

Banana/Mango Smoothie:
- 1/2 frozen banana
- 1/2 cup of frozen mango
- 2 tsp chia seeds
- 2 scoops Visalus
- 1 cup of Almond milk
- 1/2 tsp of coconut extract
The rest of my meal plan today is as follows:
Snack: roasted almonds/cottage cheese
Lunch: taco casserole
Snack: watermelon
Dinner: steamed brocoli/chicken/sweet potato wedges
Workout:
Today I will run 4 miles when I get home from work. Then do some major stretching!
Speaking of workouts. Has anyone ever heard of this? BeFitin90 I am beginning to see these online workout programs a lot now. The best thing? It’s free!!
