Class of….

Well hello there!   After a much needed rest day, it’s Monday and it’s time to get the week started.  I had a really great weekend…….jammed packed, but it was great.  My 20 year class reunion was this past weekend and it was also a two parter.  Friday night was at the local country club where I live and it was also family night.  It was good to see everyone having a great time.  Sadly, there were ones that couldn’t come or chose not to.  To be honest, I was not sure if I wanted to go, but I am glad that I did. 

I got up early Saturday and met a friend to go hiking and had a great time…   Headed home to get some groceries and do a bit of food organization.  Then I started getting ready for round two of the reunion.  The second half was at a one the hotels in Little Rock and went until 12:30.  I believe.  I shut it down around 10:30 and headed home. 

Overall I had the best time.  One of the things that I will take away from my class reunion is this….

We are all human.  In the last 20 years there have been great times.  There have been struggles.  There have been moments beyond reason.  There have been joys that can’t be expressed.  There have been trials but there have also been mountains that were climbed and conquered.  There have been deaths, but there has also been life.

Human is good.  Human is great.  Human is extraordinary.

Before I go, I wanted to share a recipe that I made last night!

 

 

Enchilada Soup:

 

What you’ll need:

 

  • 1 can of corn
  • 1 can of black beans
  • 1  4 oz can of green chilies
  • 1 can of green enchilada sauce
  • 2 cans of chicken breast
  • 2 cans of diced tomatoes
  • 1 1/2 cup of chicken broth
  • 2 cups of shredded cheese
  • 1 tbsp of nutritional yeast
  • 1/4 tsp of minced garlic
  • 1 8 oz container of plain Greek yogurt
  • Frito’s

What you’ll do:

 

  1. Mix all ingredients in a crockpot and turn it on low for a few hours and enjoy!

It turned out SO good!   I don’t really think you can mess something like this up and can add anything that you think would make it even better!

 

**Just a note….  I used WW’s cheese and it didn’t melt all that great.  Next time I might use Velveeta…**

  1. That sounds like quite a weekend, love :) I’m glad that you went and enjoyed yourself so much! It must have been nice to see so many old friends :) I can’t quite picture my high school reunion yet haha. I still have 3 years to go before my 10th but i can’t wrap my head around it. Many of the people i went to school with already have kids and are married and whatnot and there are just days where it doesn’t feel like we’re old enough for that yet!
