Meatless Monday

Morning!  How was your weekend?   Mine was pretty low-key.  It turns out that I was sicker than I thought and this stuff has hung on for a week now.  I even tried running Saturday, but could barely tweak out 2 miles.  This pretty much sucks.  :/   I feel ok, but I have this horrible cough and can even get pretty choked up once I start coughing.  If I am not better by tomorrow, I am going to have to head to the doctor.



Meatless Monday:


I will tell you that, sickness aside, I am pretty excited to be participating in the Elf 4 Health Challenge the next six weeks.  Part of the challenge is that we are paired with another person so that we can help and encourage each other throughout the week.

The first challenge that we will be doing is going meatless all day Monday.  I have never done this on purpose, but I don’t think that it’s going to be too hard.


Breakfast:   1 egg, one waffle, and half an apple

Snack:    yogurt

Lunch:    black bean quesadilla’s

Snack:    half an apple almond butter

Dinner:    sweat potato, broccoli, carrots

Snack:    peaches

  3. I never consciously think about it, but I think I go meatless more Mondays than I think! Best of luck…it sounds yummy 🙂

    I used to be meatless all the time – and I’ve been meatless today too, but the idea of doing it now sounds so hard! I think it’s about perception sometimes, but your plan looks good (and delicious)!
