You can never go wrong with sweet potato’s

So today’s first challenge in the Elf 4 Health Challenge is coming to an end! Meatless Monday: to be honest, not having any meat today wasn’t all that difficult.  Smile   

 

Dinner would be the only meal that I actually had to put some thought into, but you can never go wrong with sweet potato’s.

Tomorrow’s challenge is going to be another cool one!

 

Send a card or handwritten note to a friend. 

It can be a friend that you haven’t talked to in a while, or one that you hang out with all of the time.  It can also be a family member or someone from your church. 

 

I also wanted to introduce you to my Elf buddy this week!  Her name is Elizabeth and she blogs over at Running For Bling

 

 

I think that today is the first day in two weeks that I am actually feeling better……….and mean it.  I was a little tired when I got up this morning, but right now I feel good. 

As far as running goes, I am a little bummed out that I haven’t been able to run.  Today would have been a rest day with stretching and core work so I am going to treat it as such.  I am going to follow the last schedule that Cait sent to me and see what happens.

Tomorrow will be an easy two miles.

    So glad you are starting to feel better – I love sweet potatoes too. One of my favorite filling vegetarian meals is vegetarian chilli over a baked potato. The beans are great for protein and with the potato, totally filling (and perfect for winter)! Can’t wait to hear how your run goes today!

  3. Mmmm sweet potatoes are the greatest 🙂 I haven’t bought them in far too long — I’m ashamed of myself!
