Morning my friends!! And how was your Monday to you?? Mine was kind and gentle. I have some great news to share!! I made two recipes last night for my meals this week!! Meal planning is one of the hardest things for me. Not because I don’t like to cook, but cooking for one can be harder than it seems. Good thing I like to eat the same thing because these two recipes are super delicious! And very easy!

Remember the quinoa??
Quinoa Turkey Burgers:
- 1 1/2 cup of cooked quinoa
- 1 pound of turkey meat
- 1 egg
- 1/3 cup of bread crumbs
- Garlic seasoning
- 1 large handful of spinach blended in a food processor (I think I will add more the next time I make these)
Nikki’s recipe called for red bell pepper, but I didn’t have any so I used spinach instead.

I also put spinach in this recipe too! Here’s how I put it all together:
- 2 cups of brown rice
- 1/2 cup of plain low fat greek yogurt (I used the entire small container)
- 1/3 cup of egg whites
- 1 1/2 chicken breast
- chopped up broccoli
- 1 –1/2 cup of shredded cheese (WW kind)
- and finally some spinach!
I’ll have to admit, meal planning isn’t something that I just gravitate too, but I really really like cooking ahead. Kevin likes doing this and I know that it’s something that we are going to continue once we are together. Something I am really excited about.
Breakfast:
Today is my half day and I am kind of excited about it. The weather is supposed to be great, so I am thinking an outside run is in order. I am also going to do this lower body workout from Danica:

Hey! I put my stove on 350 and cooked it until it was a little brown on top. You can also add more cheese on top to make it cheesy! 🙂
