Morning peeps… Wednesday=Hump Day…. Whatever day it is, I’ll take it! Yesterday, I had my half day and the weather was perfect. I don’t know about you, but I am diggin these longer days with some sunshine….
I don’t want to start this post off on a negative note, but I wanted to talk about challenges today. Not challenges that include exercise or food, but those kinds of challenges that you are faced with that challenge your attitude and overall wellbeing. Those challenges that can cause you to jump in a bag of cookies or chocolates…. you know the kind. We’ve all been there. Here’s the key… How do you deal with those challenges? Do you back down or hit them head on?
No matter the challenge, I want to be able to deal with it with some sort of grace and dignity. Do I always do that? No, I sure don’t.
This challenge that happened to me this week I was actually prepared for (if I told you how, you wouldn’t believe me). So, when it happened I wasn’t surprised or even put out. I actually expected it. I really believe that God prepares us for things that happen in our lives. Good and bad. He can cause something good to come from something bad that will ultimately bring us closer to Him. I was not going to allow satan to steal any amount of joy that I have or force my focus off of Christ. No way, no how! Part of recognizing that God prepares us for things is to give Him all the praise and glory when you understand that it is He that ultimately has control of the situation.
I tell you this to just say that no matter what you are facing or even how bad it may seem, something good can come from it.

Dinner:
This recipe turned out SO great! I can’t tell you how nice it was to have something already cooked…
- brown rice
- chicken
- broccoli
- spinach
- greek yogurt
- shredded cheese
Breakfast:
Black Bean + avocado pudding:
- 1 ripe avocado
- 1 can of black beans (I will only use half a can next time)
- 2 to 3 tbsp of honey or maple syrup
- 1 tbsp of cocoa powder
- 1/2 cup of chocolate chips, melted on stove top (I used dark chocolate)
- 1/4 cup of almond milk
- 1 tsp vanilla extract
- 1 tbsp of ground flax

That pudding looks divine! I love the idea of using both avocado and black beans 🙂 And I know what you mean about challenges – it’s often how we respond that is key, rather than what the obstacles are. I’m glad you were able to get through your hiccups this week!
