Hello my friends!  How was your weekend?   It was cold and rainy pretty much the entire weekend here…. 




Sunday, the wind was really gusty!

With the weather, the yard sale was pretty much a bust.  I did manage to make $55…’s better than nothing!  It’s going into my savings account!  With what I have left, I will be taking it to a friends consignment shop to see if I can get anymore $$ more it.  It’s mostly summer clothes so I am hoping that they will go pretty fast. 


Sunday afternoon I took a spur of the moment road trip to one of my favorite places…

I am afraid that this place and I are going to have to break up though…..  

My new relationship will be with Dunkin donuts. 





New recipe alert!!



Cheesy Mexican Quinoa:



  • 1 jar of salsa
  • 1 can of black beans
  • 1/2 cup of corn
  • cumin
  • paprika
  • garlic seasoning
  • 1 cup of shredded low fat cheese + 1/4 cup
  • 1 tbsp of butter (I used heart balance)
  • 2 cups of cooked quinoa
  • 2 cooked chicken breasts



  1. cook quinoa according to the directions on the box
  2. While quinoa is cooking, mix all other ingredients together
  3. When it comes to seasoning, I just used whatever I thought would make it taste great!
  4. Before you put it in the oven, sprinkle the 1/4 cup of shredded cheese on top
  5. Bake at 400 degrees for 20 minutes
  6. Let cool and enjoy!


You could also probably substitute quinoa with brown rice.

It turned out really great!!  My dad even liked it!





Due to not feeling all that great Friday, I chose to take a rest day.  Saturday I was back at it! 








Part of the reason that I started this blog was to be able to share my life with you. My journey with weight loss and healthy living.  Due to privacy, I don’t share everything with you, but for the most part I am an open book.   To be honest, I never thought that I would be sharing my personal life with you.  I had all but given up on ever meeting someone so when Kevin came along it was a nice surprise.  Being apart from him is probably one of the hardest things I have ever had to do.  Because I have been by myself for so long, putting someone else’s needs before my own is not something that comes naturally to me.  Thankfully, my hearts desire is to do that for Kevin.  I have a strong desire to be a good help mate for him.  I want to lift him up and encourage him and that brings me great joy. 

Kevin is the type of person that really has to unplug for a bit and recharge.  This requires unplugging from the phone.  Right now, that’s our only form a communication and so when he wants to unplug I really have to give that to him.  Give him that without making him feel like he has to check in with me.  The man is amazing….he can really just take a paper clip, a watch, and a rope and get out of any situation.  MacGyver is who he is!  So I know he is able to make it through anything.  Smile    What I am really working on and learning to balance, is not feeling like he is unplugging from me.  This is a process and one that I can only depend upon God for.  Of course Kevin can reassure me and that does make me feel better, depending upon Christ for this is really what I have to do.  Giving Kevin that time is kind of like giving him a gift… my eyes.  I love him so much that I want him to be able to get out and do the things that he wants to do (while not feeling tied to the phone).  Go for long hikes or save a baby deer from a mountain lion….you know, things like that.  (he is that amazing). 

When we are together, I know that the distance won’t be so difficult.  There won’t be any!    I’ll be able to help him save that baby deer!  Winking smile 



Weight loss:


I weighed last week and was up one pound, but “aunt flo” was also in town.  I weighed this morning and I am down to 151!   That’s another 3 pounds!  21 pounds total! 

I have another 6 to go to reach my goal!



I am off to get ready for work!  I hope you guys have a really great day!   I get off at 4:00 today and I am pretty excited about it!

    That quinoa recipe sounds awesome! I will have to make that sometime 🙂

    As for the weather, we had/have snow still coming down! 😦

    Aww i’m the weather affected the yard sale but yay for still making some money! Keeping in mind that Kevin is NOT unplugging from you is huge, love. I know it’s hard but learning that now will make things easier in the long run!

    Everything will be so much better when you’re in person. Two of my major relationships (i.e., two of the three relationships I’ve ever had my whole life haha) were long distance. One was in Kuwait for a military deployment (that’s a WHOLE different ball game) and one was in another state while I was at school… It’s definitely a struggle, but when you both have that understanding of how much you love each other in your heart – it gives peace to both of you 🙂 Can’t wait til you can just save baby animals together! 🙂

    • I can’t wait to see him and be with him in person! It’s definitely harder when you love and miss them so much, but I know it will be worth it in the end. God has the distance between us right now and we both know that God brought us together. 🙂

    I feel really grateful and honored to be able to share in your relationship (indirectly!) with Kevin. It sounds like you have found someone so right for you, and it is a real joy reading about that.
