Happy Monday to you!  How was your weekend? I hope it was marvelous!    I went to church yesterday, but then I came home and just relaxed and did a little baking.  When I went to Whole Foods Saturday I was actually going to see about picking up some Almond Flour, but sheeze Louise!  That stuff is expensive.  I couldn’t justify spending $15 for a small bag of flour.  There was some Quinoa flour there and I thought about picking that up, but I am not sure how bake goods would turn out with it. 



I know it’s been a while since I last posted anything about baking, but that stuff gets a little expensive and so I had to scale back on it!  I know, it makes me sad to…




What you’ll need:


  • 1 cup of white sugar
  • 1/4 cup of light brown sugar
  • 2 eggs
  • 1 1/4 of a stick of unsalted butter
  • 1 tsp of vanilla
  • 1/2 cup of all purpose flour
  • 3/4 cup of cocoa (I used dark)
  • 1/4 tsp of salt
  • 2 tsp of coffee (already made up)


  1. Melt butter in the microwave until it’s just melted
  2. add both sugars, eggs, vanilla, and coffee…mix
  3. add cocoa
  4. add flour and salt
  5. Mix well
  6. Pour mix into an 8X8 pan (lightly sprayed)
  7. Bake for 20 minutes on 350


I under-bake so if you want them gooey, bake until the center is still a bit wiggly…. They came out really great!!

I must admit that when I came home from church (and even before church was over) I couldn’t shut my mind off.  Not thinking about anything in particular, but just thinking.  How my workouts were going to go, will I get sleep this week, I have an orthodontist appointment Tuesday morning, what are my meals going to look like this week, should I really have protein smoothies post workouts, did I empty the liter boxes this morning, yeah….yeah I think I did, how many runs will I do this week, when will I meet the man God wants me to have, will I know it when I meet him, I think I’ll bake when I get home, it’s supposed to be a rest day but I might run, no…no don’t run it’s a rest day.

Workouts for the week:

  • Monday:  Pump and Shred/45 minutes
  • Tuesday:  20 minute ab routine/45 minute run
  • Wednesday:  Pump and Shred/45 minutes
  • Thursday:  Flow (yoga)/20 minute ab routine
  • Friday:  45 minute run
  • Saturday:  Pump and Shred/45 minutes
  • Sunday:  Rest




  • Broccoli/brown rice/chicken combo
  • Turkey/Quinoa patty
  • Tilapia/broccoli combo
  • chicken/sweet potato combo




  • Two



I have been reminded lately that people are brought into our lives for a season.  To refine.  To change.  To grow.  Some stay for years, but then some only stay for a few months and that is ok.  The reasons can be unknown, but then sometimes you just know the reason they are in your lives…..or that they left. 

The reasons they leave or, for that matter, you leave, don’t have to be known.  As difficult as that is, it does happen. 

Count each moment.

Love them while they are in your lives

Have No regrets

Lift them up

Don’t tear them down

Laugh together

Cry together

But don’t forget to say goodbye when that season is over

    Ahh days and hours like that are both awesome and frustrating! As long as i can channel everything into a list like you did, i don’t mind it, since usually my mind feels better after that. Sometimes, though, it keeps going and then I get frustrated! I’m glad the lists helped you 🙂 And i totally agree with you about baking! I love to experiment and try different flours and stuff, but it’s so expensive! I just can’t justify it right now, so i try to stick with stuff i readily have on hand…better than nothing for now 😉 have a great Monday, love!

  3. It’s hard to realize that some people will come in and out of your life from season to season. I’m realizing that at this point in my life more than ever. I think you’re right about just staying present in our friendships and not getting too upset when friends come and go. It’s hard but usually God has another friend right around the corner…

    • He really does…. It’s hard, but I try to take a step back and ask, “does this friendship bring me closer or further away from God?” We just never know who’s lives we are going to impact and in what way. 🙂 Hope your Tuesday was great!
