A Recipe and Goals

Thank goodness it’s Friday!  I don’t know about you but I always like it when a Friday comes rolling around.  Then there’s Saturday! 

I wanted to share a recipe with you today!  What kind you ask?

 

Dessert of course!!

Pumpkin Spice chocolate chip cookie dough cheesecake bars 

 

I found the recipe on Pinterest and couldn’t wait to make it.  I am not a huge fan of baking with cream cheese but I really did like these.  The cream cheese didn’t mix all of the way but they still tasted really good. 

 

Ingredients:

Crust:

  • 2 1/2 cups of gingersnaps
  • 1/4 cup of granulated sugar
  • 1 stick (1/2 cup) of unsalted butter (melted)

Cheesecake:

  • 2 packages of cream cheese (softened)
  • 3/4 cup of granulated sugar
  • 1 cup of pumpkin (not pie filling)
  • 1 tsp of cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg

Cookie dough:

  • 4 tbsp unsalted butter at room temp
  • 1/3 cup of brown sugar
  • 1/4 cup of granulate sugar
  • 1/4 tsp of salt
  • 1 tsp of vanilla
  • 2 tbsp of almond milk
  • 3/4 cup of all purpose flour
  • 1/2 cup of mini chocolate chips

Directions:

I baked in a 9×13 glass pan that was lined with parchment paper at 350 for 31 minutes.  Bake until the edges are brown and the center is still a bit wiggly.  Once it is completely cooled, store in the refrigerator for at least 3 to 4 hours or overnight. 

 

I really loved this recipe and I really loved incorporating pumpkin in it.  The cream cheese didn’t blend like I wanted it to but I think it was my mixer.  I am definitely going to make this again!

I had an appointment in Little Rock yesterday morning but had just enough time to swing by and get some coffee.  Win!

 

So yesterday I was asked the question, “what are your current goals?” 

For a second I was like…… “um, I don’t know”

I mean when I graduated high school I thought that I would wait a year before I went to college and then I didn’t end up going at all.  I got a job at a local fast food place where I live and I have had a job ever since.

As I started thinking about some of the goals that I have made or wanted to make, it dawned on me that I am a “goal breaker”.  I have decided to do lots of things but most of the time I don’t follow through.  

I would love to own a bakery.

Lose 25 pounds.

Become a health coach.

Complete one.single.nutrition.program.

Get out of debt.

Start sewing again.

My question to myself is this, “what am I doing to actually reach those goals?” 

 

Do you ever feel like you drop a goal and never push through to meet it?

  1. I wish I were as talented at baking as you! Even when I follow a recipe, it always seems to turn out wrong! That’s why I stick with cooking, you don’t have to be as precise! As for your goals: I think it’s awesome that you want to own your own bakery and I’m with you on wanting to get out of debt. We only have a little bit of student loans left and our mortgage- hoping to pay off the student loans within the next year. We shall see! 🙂 Happy Friday. Hope you have a great weekend!

    • I am the same way when it comes to cooking! There are very few recipes that I actually like making because they usually end up not looking that great. Lol! But I really do enjoy baking. It’s beautiful here today Diane! I hope it is where you are too! Kiss that baby! She is so beautiful! 🙂
