Bake With Me Tuesday!

So I have a healthy cookie recipe for you today!   With just a few ingredients….

What you’ll need:

 

  • 2 ripe bananas
  • 1 cup of rolled oats
  • 1/4 cup of crushed walnuts

 

I also added:

 

  • 1 tsp of cinnamon
  • 1 cap full of vanilla
  • and 1/4 cup of semi-sweet chocolate chips

 

 

  1. mash bananas first and then mix all ingredients!
  2. Bake at 350 for maybe 10 minutes

Bake With Me Tuesday!

 

Snickerdoodle-like Cinnamon and White Chip Cookies:

  • 1 stick unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup  light brown sugar
  • 1 large egg
  • 1/2 tsp pure vanilla
  • 1 1/4 cups all purpose flour (I used organic)
  • 3 tablespoons instant vanilla pudding mix (dry)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 cup cinnamon chips
  • 1 cup white chips

 

 

Directions:

 

  1. Pre-heat oven to 350 degrees
  2. Cream butter and sugars in mixer for about 2 minutes
  3. Combine egg and vanilla
  4. Slowly add flour, salt, baking soda, ground cinnamon, and vanilla pudding mix
  5. add both cinnamon and white cups until just combined
  6. scoop out about two inches apart onto cookies sheet and bake for 10 to 12 minutes

Reeses Pieces Double Chocolate Chunk Cookies

 

  • 1 stick of unsalted butter softened
  • 1/2 cup of sugar
  • 1/2 cup of light brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 1/4 cup of all-purpose flour
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 tsp of baking soda
  • 1/2 tsp salt
  • 1 cup of chocolate chunks
  • 1 cup of mini Reeses Pieces

 

  1. Set oven at 350 and line your baking sheet with parchment paper
  2. Combine butter and both sugars and crème until well combined
  3. Add egg and vanilla and combine well
  4. Slowly add flour, cocoa powder, salt, baking soda
  5. Lastly add the chocolate chunks and mini Reeses Pieces
  6. Scoop dough onto baking sheet about 1 inch apart
  7. Bake for 10-12 minutes

Bake With Me Tuesday

White Chocolate Snickerdoodle Cookies:

  • 1/2 cup of butter softened
  • 1/2 cup of sugar
  • 1/2 cup of brown sugar
  • 1 large egg
  • 1 tsp of vanilla
  • 1 tsp of cinnamon
  • 1/2 tsp of baking soda
  • 1 1/4 cup of all purpose flour
  • 1/2 cup to 2/3 cup or even 3/4 cup of white chocolate chips
  • 1 tbsp cinnamon and 1/4 cup of sugar combined to dust the top

 

  1. Set oven at 350
  2. Crème together the butter and both sugars
  3. Add egg and vanilla until well combined
  4. Stir in cinnamon, flour and baking soda until just combined (do not over mix)
  5. Stir in white chocolate chips and then place bowl in the freezer for 30 minutes or longer to chill
  6. Once chilled form one inch balls and roll in the cinnamon/sugar combo
  7. Set on cookie sheet about one inch apart
  8. Bake for 8-10 minutes

Bake With Me Tuesday

 

Well hello there Tuesday!  My aren’t you lovely!  I have the day off and I am going to enjoy you so much!  I have an appointment in Little Rock this afternoon, but I am going to be busy this morning catching up on some things. 

It’s been a great weekend and it’s going to be a better week! 

 

Let’s get started baking!

 

One Bowl Butterscotch Chocolate Chunk Cookies:

  • 1 stick of unsalted butter softened
  • 1/2 cup sugar
  • 1/2 cup of brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup plus 2 tbsp of flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup of butterscotch chips
  • 1 cup of chocolate chunks (I substituted mini-chocolate chips)

 

  1. Set oven at 350 and line your baking sheet with parchment paper
  2. Combine butter and both sugars and cream; about two minutes
  3. Then add egg, vanilla and mix until combined
  4. Add flour, baking soda and salt and then fold in the butterscotch chips and the chocolate chunks
  5. Scoop onto to baking sheet about 1 inch apart
  6. Bake for 10-12 minutes

I really liked these cookies!  They were a bit crispier than I really wanted them to be but they were really good Smile

 

If you aren’t a butterscotch fan, don’t worry….it wasn’t overpowering at all.
