What Christmas Means

As I was on my way into work yesterday morning, the coolest Christmas song came on the radio.  B 98.5 here in Arkansas plays Christmas music the entire month of December!  It’s a Christmas party in my car, on my way to work, everyday!  🙂

Anyway, the song.  I believe it is by this group called Panatonics and the name of it is, That’s What Christmas Means to Me.  I love it!   It reminded me of the reasons I love this time of the year! 

Aaaaaaand, I wanted to share them with you!




  • Baking.  I mean who doesn’t like to bake during the holidays.  I love to bake all year round but there is something about this time of the year that makes me want to try new recipes.  I think the next thing I want to try is a cheesecake!





  • Candles lit.  I love love love candles.  I love turning my light off in my bedroom and just lighting a candle while I watch a Christmas movie this time of year. So cozy!
  • Presents under the tree.  Okay.  I am not about getting a bunch of presents but there is just something about them being under the tree. 
  • The smells.  I love the smell of the holidays.  Sounds weird but things seem to smell better.
  • Snow.  There’s always a chance for a white Christmas
  • Christmas movies!! 
  • Family
  • Friends



  • Hot chocolate




  • Hugs and cuddles from my niece and nephew




  • The Birth of Jesus.  “And she brought forth her firstborn Son, and wrapped Him in swaddling cloths, and laid Him in a manger, because there was no room for them in the inn.”  Luke 2:7





Last Christmas 2013



I got my first workout in since my procedure!!  All that I have to say is that it hurt.  A lot.   My doctor told me to wait at least 4 to 5 days before I get in a workout.  I waited 7.  Before that, it had been a while since I consistently worked out. 

Did I mention that it hurt?

Oh my goodness!  I had to modify the modifications and there were a couple of times that I thought I might puke! Its so amazing how much strength you lose when you don’t consistently stick to it. 

My entire body was shaking!!



That’s about it!  Going to work this morning and then coming home to chill out before next week!  Have a lovely day!

A Recipe and Goals

Thank goodness it’s Friday!  I don’t know about you but I always like it when a Friday comes rolling around.  Then there’s Saturday! 

I wanted to share a recipe with you today!  What kind you ask?


Dessert of course!!


Pumpkin Spice chocolate chip cookie dough cheesecake bars 


I found the recipe on Pinterest and couldn’t wait to make it.  I am not a huge fan of baking with cream cheese but I really did like these.  The cream cheese didn’t mix all of the way but they still tasted really good. 




  • 2 1/2 cups of gingersnaps
  • 1/4 cup of granulated sugar
  • 1 stick (1/2 cup) of unsalted butter (melted)


  • 2 packages of cream cheese (softened)
  • 3/4 cup of granulated sugar
  • 1 cup of pumpkin (not pie filling)
  • 1 tsp of cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg

Cookie dough:

  • 4 tbsp unsalted butter at room temp
  • 1/3 cup of brown sugar
  • 1/4 cup of granulate sugar
  • 1/4 tsp of salt
  • 1 tsp of vanilla
  • 2 tbsp of almond milk
  • 3/4 cup of all purpose flour
  • 1/2 cup of mini chocolate chips


I baked in a 9×13 glass pan that was lined with parchment paper at 350 for 31 minutes.  Bake until the edges are brown and the center is still a bit wiggly.  Once it is completely cooled, store in the refrigerator for at least 3 to 4 hours or overnight. 


I really loved this recipe and I really loved incorporating pumpkin in it.  The cream cheese didn’t blend like I wanted it to but I think it was my mixer.  I am definitely going to make this again!





I had an appointment in Little Rock yesterday morning but had just enough time to swing by and get some coffee.  Win!


So yesterday I was asked the question, “what are your current goals?” 

For a second I was like…… “um, I don’t know”

I mean when I graduated high school I thought that I would wait a year before I went to college and then I didn’t end up going at all.  I got a job at a local fast food place where I live and I have had a job ever since.

As I started thinking about some of the goals that I have made or wanted to make, it dawned on me that I am a “goal breaker”.  I have decided to do lots of things but most of the time I don’t follow through.  

I would love to own a bakery.

Lose 25 pounds.

Become a health coach.

Complete one.single.nutrition.program.

Get out of debt.

Start sewing again.

My question to myself is this, “what am I doing to actually reach those goals?” 


Do you ever feel like you drop a goal and never push through to meet it?

On Fear

Hi ya’ll!   I hope that you enjoyed your Veterans Day!   I spent the day with my parents and drinking hot cocoa.   I don’t know about you but I am loving the temperatures where I live.  It was rainy, cold and windy Tuesday but it made drinking hot cocoa much more fun.  Weird, I know.




Being off for the holiday has will have my week off a bit.  Yesterday felt like Monday.  Again. 


This holiday season I am trying new dessert recipes and as you know, baking makes me happy!

Mainly because it really does speak the truth.  Oh how I wish that this was not something that I struggled with.  I mean we all have things that we struggle with but this is a big one for me.  I believe what it boils down to is fear. 

Fear of the unknown.

I have allowed fear to rule in my life for so long that I really can’t tell the difference anymore.  I don’t know about you but I am kind of tired doing that.  I want to be finished with giving fear that kind of power over me. 

I am not afraid of everything mind you.  It’s just in certain things that I allow it to lead my life and decisions.  Living in fear of something doesn’t allow God to use us to our full capability.

The truth is, I am sick of me.

I am sick of being afraid.  I am sick of being hot and cold or God, depending on my circumstances.  I am sick of wrestling with the same things I’ve wrestled with for most of my life.

I want to be well.  I want to be productive and joyful.  I want to be useful for the Kingdom, valuable to my family, and have something to show of my time on earth.

When I meet God one day, I want to say with open hands, here’s what I did with the life You gave me.

I want God.  I want Him to show up tangibly in me.  I want Him to blow me away with insights and remind me that He is bigger than all my daily crazy.  I want Him to sweep me off my feet and take me on one of His many amazing adventures.

It is not a bad thing when we are sick of ourselves.  It is, in fact, a good thing.  Because that’s when we will desire God in such a big way that we are willing to let go of the steering wheel of our life and let God drive us into our future.


How amazing is that?

Don’t you want that?

I don’t know about you but I really do want that.  There is so much faith and strength in stepping out and giving God full reign in your life. 

I want this and I want to be healthy.  I believe that when you are healthy on the inside, it shows up on the outside.  And no, not in skinny jeans. It just shows.

Chocolate Pumpkin Bread Recipe!

Good morning my sweet friends! 



It’s a cool brisk morning!  Deer!!!


Just popping in to share a recipe with you that I found on Inside BruCrew Life




The recipe calls for a Caramel Icing but I used a Pumpkin Spice icing that worked really well with the chocolate flavor! Powdered Sugar, pumpkin pie spice and almond milk.  Delicious!




This was a great recipe!  🙂


Meal Planning/Prepping

It took me a long time to get on the meal prepping/planning train but now that I am on it, I love it!  I tried several times to get on board and lots of times just ended up not eating anything healthy. 
















If you know anything about me, you know that I love organization.  I love a clean work place.  I love a clean living space.  I also love to be able to just to grab my food and go!  Here are some of the things that help me with meal prepping/planning:


  • Take time to set down and come up with a meal.  This actually may be the hardest part but really it’s simple if you think about it.  Think about what you like and go with that.  Chicken is my meat of choice so I normally try to include that.  I also love love love the chicken patties that I make.
  • Containers.  Invest in some containers that you can just grab and go.  This makes it so much easier and keeps me motivated to keep doing the meal preps.
  • Choose some healthy snacks and pre-bag ‘em on up! 
  • Do your own thing.  I love to get ideas from others who meal prep but in the end be yourself and do it your own way.
  • Organize the meals in the fridge.  Okay this might be taking it a little too far but it actually helps me to know that I have a; snack shelf, lunch shelf, dinner shelf….etc.



Update on Life:























Let’s just say that I have done some baking…  Smile






One of the things that I have really struggled with lately is my body experiencing changes.  I think I may have eluded to this before but getting older really does affect your body and frankly sometimes just really sucks.  When I started my weight loss journey, I was barely in my 20’s and now I am about to get out of my 30’s!  I used to just pop up out of bed and get a workout in and even hit the gym when I got off work.  Holy hormones is another story.  Some days I feel so fatigued that the thought of working out just makes me want to cry.  There are also days that I could make every single meal I eat out of sugar. 

Some of the symptoms that I have started to have in the last few months have started to concern me.

  • Out of control cravings
  • not sleeping well
  • not sleeping through the night
  • extreme exhaustion
  • high anxiety

I am also apparently allergic to something….. I have continued to have some sort of reaction to….um…..something.  The last couple of reactions have been a little serious.  My entire body whelps up and my throat tightens and my eyes swell. 


I am having some blood work this coming week to get things checked out.  Allergies, sugar, hormones.  Ugh.

Just finished a sweaty workout and now I am off to get ready for work!
