Life Happens

How is it that a few weeks could go by and you feel like it was an instant?  A brief moment.  A season.

IMG_4790

I love this quote.  Mainly because life really does just happen.  There are high moments and there are low moments.  Life can be confusing and it can also be overwhelming.  Lots of times I could be one decision away from wanting to close the doors to my heart and remain in darkness.  To feel the coldness of the dark on my face.  Not speaking.  Not feeling.

But what kind of life is that?

It’s not one.

No matter how we plan our lives out and what we expect it to look like, God will turn it into something that we couldn’t have even imagined.  Something amazing.

IMG_4792

Here’s the thing.  God is not surprised when I mess up, nor is He surprised when I do something amazing.  I am His daughter.  He loved me (and you) before the entire world was in form.

We just have to let him work in our lives.  We have to make deliberate choices to smile instead of cry.  Deliberate choices to love each other and ourselves enough to want better instead of darkness.

Oh my brothers and sisters how He loves us!  We don’t have to be in darkness, shame and regret for a certain amount of time before He’ll love us again.  There isn’t anything that you or I can do that will take that love away from us.

God is interested in the finished product.  He’s already seen it.  His eternal purpose is to bring us into the image and likeness of Jesus Christ.

He will do anything in His power to tell you;

I love you

I love you

I love you

I love you

The best part?

His love never fails.

Food and Fitness:

The past few weeks have been up and down when it comes to food and fitness.  Lately, I have found my inner child and have rekindled my love for pop tarts.  Strawberry and blueberry.  Oh the struggle.

Is very real.

My parents have been home this weekend and my dad so kindly made me some chili to eat on for the coming week.  Meal prep done!!  🙂

As for fitness, I will be doing a hybrid of weight training, Piyo and Insanity Max 30 (modification only).  With the joint issues and stiffness I am having, I will be listening closely to my body.

Sleep!!  I will be getting back on a better sleep schedule.  I go to bed early but it’s getting up at 3:30 or 4 to start my day when I really don’t have to, is starting to wear on me.

Goals and Such

As I get ready for the coming week, I wanted to share with you some of the things that I am going to be working on.  Goals.  Things I want to reach.

Something that I am trying to do or achieve.

Bible Reading:

First I wanted to share with you what I read this morning.  🙂

IMG_3747

The Job answered the LORD and said:  I know that you can do all things, and that no purpose of yours can be thwarted.  Who is this that hides counsel without knowledge?  Therefore I have uttered what I did not understand, things top wonderful for me, which I did not know.  Hear, and I will speak; I will question you, and you make it known to me.  I had heard of you by the hearing of the ear, but now my eye sees you; therefore I despise myself and repent in dust and ashes.

Job 42:1-6

I am in a season of moving forward and leaving behind past regrets and mistakes.  Something I think will be a beautiful journey, both difficult and beautiful.

IMG_3742

One of the hardest things that a person let alone a women can learn about themselves, is that they don’t have it all together.  Especially in their walk with the LORD.  Even when you think you feel close to Him, you can always get closer.

Even when your time spent with Him is enough, you can always spend more time with Him.

I am at a crossroads in my walk with Him and because I am a completely different person I feel like I am starting over.

Getting to know my Creator as I am now.  I must admit that as frightening and scary as it sounds, I feel excited.  Well, enough excitement that makes me want to go forward.  😉

I believe and know that it will be a beautiful journey for me.

Fitness:

As you know I started using the Insanity Max :30 workouts and I have been loving them!  Well, my body hasn’t.  Let me explain.

When you start a fitness program, you must get the proper equipment and you must master proper form.

Neither of which I had.

I hurt myself.

More specifically, my back.

My lower back down to my left hip.

I was not pleased at all.

I even eventually had to go to the doctor and get a shot in my backside.

I couldn’t even make it to work due to the fact that I couldn’t even set up straight!

I was slightly embarrassed.

Anyway, I haven’t worked out since last Saturday and I feel horrible!

The unfortunate thing that they do at the doctors office is weigh you and I found out that I weigh 182 pounds.  What?!?  Over the last year, I have put on 25 pounds and I would like to lose 30.  My BMI is 31% and knowing that made my eyes bug out!

I feel my best at 150 pounds and with a BMI of 27-28.  Still not perfect in the worlds eyes, but it suits me just fine.

What does this mean?

It means goals that what it means.

IMG_3749

It also means that I ordered the proper gear for my workouts.  Shoes.

I will be sticking to the modification until I master each move.

I will be sticking to a “whole 30ish” type of eating.  Mostly of protein and no processed foods.

I will do my very best.

Lately:

Getting ready for the week!

So now that Christmas is over lots of people will be setting some new goals for the New Year.  What goals or things do you want to set for yourself this coming year?

set and reach goal concept

How in the world does the year go by so fast??  Before you know it, time has flown and you wonder….Did I reach any of the goals that I wanted to meet?  I’ll be honest.  I am horrible at reaching goals or maybe it’s the sticking to it.

Being a perfectionist sometimes works against me.

Here are some of the things that I want to work on:

  1. Quiet time.  One of the main goals that I have this coming year (and even right now) is to be deliberate in the time that I spend with Christ.  Any type of relationship takes effort and nourishing.  The same can be said for our relationship with Him.
  2. Eating better.  Get rid of the sugar!! Just meal planning and meal prepping isn’t good enough. I have to stick to that plan and not consume a giant amount of sugar or sugar containing foods.  Don’t get me wrong…..too much restricting can lead to binge eating (for me anyway) but I do think there must be a balance.  For the body to work the way it’s supposed to, it must be fueled properly.
  3. Budget better.  I want to find a budget that works for me.
  4. I want to learn how to make the following: jam, a whole chicken and marshmallows. Of course this will not be eaten together… 😉
  5. Start a cross stitching project.  Years back my mom taught me how to cross stitch and I did lots of little things and a couple of big things but then I just put it down.  I have something that I want to start and so I would like to pick that up again.

There are other things that I want to do and things that I want to invest in.

I did a little meal prepping yesterday:

  • chicken patties cooked with green onions
  • steamed broccoli and cauliflower
  • red potatoes cooked in evoo and green onions
  • broccoli and cauliflower patties
  • carrots

I had to work Saturday (only three hours) and since it was cold and rainy, this is how I spent the rest of the day.

This is my sweet man Rocky.  When I took this picture, he was kneading biscuits and he was all business.  This lil guy was found by a neighbor of ours in a fast food restaurants dumpster.  Really?  How can someone actually just throw away an animal?

Anyway, he’s been with us ever since.  He’s huge but has the wimpiest meow.  🙂

A Recipe and Goals

Thank goodness it’s Friday!  I don’t know about you but I always like it when a Friday comes rolling around.  Then there’s Saturday!

I wanted to share a recipe with you today!  What kind you ask?

Dessert of course!!

Pumpkin Spice chocolate chip cookie dough cheesecake bars

I found the recipe on Pinterest and couldn’t wait to make it.  I am not a huge fan of baking with cream cheese but I really did like these.  The cream cheese didn’t mix all of the way but they still tasted really good.

Ingredients:

Crust:

  • 2 1/2 cups of gingersnaps
  • 1/4 cup of granulated sugar
  • 1 stick (1/2 cup) of unsalted butter (melted)

Cheesecake:

  • 2 packages of cream cheese (softened)
  • 3/4 cup of granulated sugar
  • 1 cup of pumpkin (not pie filling)
  • 1 tsp of cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg

Cookie dough:

  • 4 tbsp unsalted butter at room temp
  • 1/3 cup of brown sugar
  • 1/4 cup of granulate sugar
  • 1/4 tsp of salt
  • 1 tsp of vanilla
  • 2 tbsp of almond milk
  • 3/4 cup of all purpose flour
  • 1/2 cup of mini chocolate chips

Directions:

I baked in a 9×13 glass pan that was lined with parchment paper at 350 for 31 minutes.  Bake until the edges are brown and the center is still a bit wiggly.  Once it is completely cooled, store in the refrigerator for at least 3 to 4 hours or overnight.

I really loved this recipe and I really loved incorporating pumpkin in it.  The cream cheese didn’t blend like I wanted it to but I think it was my mixer.  I am definitely going to make this again!

I had an appointment in Little Rock yesterday morning but had just enough time to swing by and get some coffee.  Win!

So yesterday I was asked the question, “what are your current goals?”

For a second I was like…… “um, I don’t know”

I mean when I graduated high school I thought that I would wait a year before I went to college and then I didn’t end up going at all.  I got a job at a local fast food place where I live and I have had a job ever since.

As I started thinking about some of the goals that I have made or wanted to make, it dawned on me that I am a “goal breaker”.  I have decided to do lots of things but most of the time I don’t follow through.

I would love to own a bakery.

Lose 25 pounds.

Become a health coach.

Complete one.single.nutrition.program.

Get out of debt.

Start sewing again.

My question to myself is this, “what am I doing to actually reach those goals?”

Do you ever feel like you drop a goal and never push through to meet it?

Have a wonderful day!!
