Oh my word Happy Friday!!!!   I can not be more happy to see this day!


We are celebrating this lil mans birthday tonight!  I can’t wait for him to see what I got him!  And of course the cake.  I love cake.  🙂

I just love this kid.


This morning when I got up I felt really good!  This getting older stuff I want to do gracefully so I’ll take it when I can get it.

For my workout this morning, I did Piyo Buns and holy buns!!  There were a couple of times that I thought, “you know, my legs are going to collapse underneath me!”  lol!

But I really love the Piyo workouts and so I’m gonna stick with it.


I cannot promote this program enough.  Piyo helps you strengthen your muscles and flexibility all the while you are just using your body weight.  I have to admit that when I finish a workout, I feel bad-A.  😉




Another reason that I am so excited that the weekend is here?  Finally getting the decorations out tomorrow and putting up the tree!!

Healthy living:

If you have been living the healthy lifestyle for a long time or just now making some healthy decisions, you know that having others around you that make similar decisions is a wonderful feeling.  A really good friend of mine that I work with is making some healthy eating decisions and it helps me so much while I am at work to make better decisions.  She loves Rachel Ray and she loves to cook and she has made some pretty amazing things lately!  It makes me want to get in the kitchen and cook!  Not just bake.  😉

One of the things that I want to try cooking is a whole chicken.  Something that I have never even attempted to cook.  I want to make some cauliflower mash, Brussels sprout salad with cranberries,  roasted sweet potatoes with rosemary.  Doesn’t that sound good?!

Something else that I have never attempted to make….lasagna, the healthy version. 



It’s been cloudy and rainy for about a week now……. I need sunshine!! 🙂

Chocolate Pumpkin Bread Recipe!

Just popping in to share a recipe with you that I found on Inside BruCrew Life




The recipe calls for a Caramel Icing but I used a Pumpkin Spice icing that worked really well with the chocolate flavor! Powdered Sugar, pumpkin pie spice and almond milk.  Delicious!




This was a great recipe!  🙂


Monday Update!

Afternoon!!  Just checking in to see how you are doing and for a quick update.  Things are still pretty busy at work but I took today off to have a long weekend.  I was going to go see my parents but it didn’t quite work out that way.  I am going to go see them soon! 

I feel so out of the loop when it comes to blog reading and posting.  I wish I had more time to read and surf like I did.

One of the things I am going to focus on in the coming weeks is balancing out my meals better.  I do great for breakfast and lunch but when I get home and my brain is fried, I just want to chill out and not even think about eating.  Even when I meal plan and prep!

True story.  Last week.  At work.



This and a Friday night date made me smile… Mrs. Brenda I know you read and I just wanted to tell you that Robert and I had a wonderful time! Winking smile   He’s a kind man and was a perfect gentlemen. 





This lil guy makes it very difficult to get up in the morning….



So ready for fall to get here!  Made some Pumpkin bread this past weekend and took it to church!

And so it begins….




The next few days people will be setting goals and resolutions to get into better shape and eat better.  In the back of my mind, I am not any different than anyone else and am pretty excited about fitting in better quality foods. 

My advice?  Go easy on yourself and don’t expect what works for someone else will also work for you.  It may or may not.  Find what does work for you, stick with it, and enjoy it.  If you don’t enjoy something, you are more likely not to stick with it.

Find a good workout program, even if it’s just walking.  If you don’t see results in a short period of time, keep doing it.  Give your body long enough to make the change. 

Eat clean and drink water. Simple.


I also think that not only cleaning up your “diet” but also cleaning up other things in your life that may be cluttering it is important.

I have had the entire week of Christmas off and I have really enjoyed just having quiet time, hanging out with family and just being still.  It’s been nice to have positive thoughts instead of negative. 




This is something that has really convicted me this past week.  My mouth.  What I talk about and what I put into my thoughts.  To be honest, this is quite hard for me because I love to laugh and have a course since of humor sometimes.  I can always push the envelope when it comes to humor, but I have noticed that even course things have a negative effect on me.

Anyway, just something that I have been thinking about.



I did some meal planning yesterday and ended up making one of my favorite recipes. 


  • Tyson’s frozen cubed chicken
  • about 8-10 red potatoes
  • 1 bottle of Ken’s Lite Italian dressing

Mix all ingredients together and you have the yummiest dinner!  I don’t use the entire bag of chicken nor the entire bottle of dressing.  I just try and judge how much will fill up a 9X13 glass pan and then go from there.  I line the pan with aluminum foil and then cover it while it is cooking.

Yum and Yum.




Well….I am off to make up some turkey burgers for the week!

Pumpkin Bread!

Happy Monday!  As I set here typing this up, drinking my coffee, I feel so blessed to be alive.  My body feels its age this morning, but it’s going to be an amazing day. 


I wanted to share a recipe with you this morning!


Vegan Chocolate Chip Pumpkin Muffins:  (Quick Bread)


  • 1 cup plus 2 tablespoons of all purpose flour
  • 2 tsp of baking powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • pinch of salt, optional and to taste


  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 3/4 cup of pumpkin puree (not pumpkin pie filling)
  • 1/3 cup of coconut oil (melted)
  • 1/4 cup unsweetened vanilla almond milk (other milks may be substituted)
  • 2 tablespoons of mild or medium molasses
  • 1 tablespoon vanilla extract
  • 1 cup of mini semi-sweet chocolate chips




  1. Preheat oven to 400 degrees
  2. Wisk all dry ingredients and set aside
  3. Mix sugars, pumpkin, coconut oil, almond milk, molasses and vanilla with a wisk
  4. Combine all ingredients and mix well. 
  5. add semi-sweet chocolate chips

You can make muffins out by dividing the batter equally in a prepared pan, but I made it into a quick bread and it turned out just as great!



















The first time that I made this it did not turn out.  Not due to this amazing recipe from Averie Cooks, but because I was running behind and if I had actually waited, I would have been late for work!  This time?  It turned out great!  This is a really rich recipe and I love the molasses and pumpkin combined together.

This week I am not sure what I am going to do.  This morning I am actually just going to walk…I am still feeling a bit under the weather.  Better yet, I might even just rest today.  Other than working Saturday, I stayed in this past weekend and just did some major laying up.
