“But that is not for us to decide…

….All we have to do is decide what to do with the time that is given to us.”  I am not sure if there are any Lord of the Rings fans out there, but it happens to be one of my favorite movies.  After Frodo expresses his thoughts about bearing the One Ring and wishing that none of the bad things they had been experiencing had happened, this is what Gandalf tells him.   The actual scene plays out like this: Frodo:  “I wish the ring had never come to me.  I wish none of this had ever happened.”

Gandalf:  “So do all who live to see such times, but that is not for us to decide.  All we have to do is decide what to do with the time that is given to us.”

Anyway, now that I have completely ruined my super cool reputation…ahem.  🙂   I still think it’s a great quote.  It may not be a ring, but we all have dealt with things, or currently dealing with things that we wish we could just pass onto someone else.  We are only here for a little while.  Why not make the most of each moment that we are given.

Breakfast:

Udi’s Gluten free Cinnamon raisin bread, with almond butter, a banana, and chia seeds.

Today was a half day for me, so all I packed today was a mid-morning snack, or first lunch as some would say. 🙂

Chobani Black Cherry Greek yogurt and some granola

Today’s list of things to do:

Wash car

wash clothes

de-clutter bedroom

organize bill statements

go to Target for a new sports bra

have three people sing me the happy birthday song

blog

workout

As you can see I still have a few things left on my list to do.  I am getting ready to do the last BodyRock workout in the Challenge.  I can’t wait to see what they have in store next!  I just went to the website to print out the workout and it looks pretty awesome!

Lunch:

When I got home from work today, I wasn’t sure what I wanted for lunch.  I grabbed the tofurky and some black beans and then went for some brown rice…..nothing seemed like it would satisfy me.  So, I remember printing off a smoothie recipe that I found on Peanut Butter Fingers the other day and made it instead.  Boy am I glad that I did!!

Julie’s recipe:

  • 3/4 cup 2 percent milk
  • 1 scoop chocolate protein powder
  • 1 1/2 frozen banana
  • 1 1/2 tablespoon peanut butter
  • 1 tablespoon cocoa powder

What I changed:

  • 1 cup of 35 Calorie unsweetened Almond milk
  • 1 scoop of Whey chocolate protein powder
  • 1 frozen banana
  • 6-8 frozen cherries (yum!)
  • 2 tablespoons of peanut butter (I’m a freak what can I say)
  • 1 tablespoon of carob powder
  • handful of spinach

This smoothie was the best I have ever had.  I actually measured all of the ingredients on this one.  I usually just throw everything in there and frankly there is no telling how many calories I was consuming.  So, I measured.  It’s something new that I think I going to do.  😉

This thing was SO chocolatey and SO good!   I am still not hungry!! 🙂

I am off tomorrow and I am so glad.  May actually run to Target tomorrow for the sports bra.  Got a big day planned with the family.  Going to make this homemade pizza and yes, eat real cake.   I can’t wait!

Well, I am off to prepare for my Sunday School lesson.  I teach the 1st thru 3rd and let me tell ya, if you wing it……………….they know.  Of course my niece is in my class and she is brilliant.

And beautiful. 🙂

Oh!!!  I forgot to tell you…. I got a message from one of my students that I had while I was in Kazakhstan!  I was super stoked when I saw it and then when I finally read it, it made me tear up.  She has been taking English classes and can now speak better English.  Enough to write and have a conversation!  I was so happy to hear from her!

She is on my right.

Welp, got to run….have a great afternoon! 🙂

Class has officially begun!

Morning!!  🙂   I took a bit of a break yesterday from blogging so that I could just relax and mentally prepare myself for my Seminary class that started yesterday.  As a matter of fact, I think I only took pictures of breakfast.

One banana, two slices of gluten-free cinnamon raisin bread, and almond butter.

Workout:

Here is why I love working out so much.  If you ever feel like you are dragging or have no energy.  Take a walk, or a jog, or pop in a workout DVD.  This always does the trick for me.   The BodyRock website hadn’t put up the new workout for Monday yet, so I grabbed on of my Firm DVD’s and worked it.

My church is associated with the Southern Baptist Convention and one of the many super cool things about them is that they offer what’s called Seminary Extension classes.  These are classes that anyone can take, even if you are not studying to become a pastor.  Which I am not.  I have taken two classes so far and this will be my third.  History of Christianity, Systematic Theology, and now Christian Ethics.  After taking the first session last night, I am pretty excited about taking it.  Want to hear something cool?  I read a small devotion before I went and it referenced the scripture in Romans 12 verse 2.  “And do not be conformed to this world, but be transformed by the renewing of your mind, that you may prove what is that good and acceptable and perfect will of God.”  Well, when I get to class and read the second paragraph of the intro, it was the same passage.  I shouldn’t be surprised, but it was nice to see the connection and the affirmation of the class.  The class will cover the next 10 weeks, with that said, my plan is to still work in a workout, eat balanced meals, and get plenty of rest/sleep.

Workout:

Today’s workout consisted of the BodyRock 2012 Challenge Week 3 Day 11.  Which took about 20 minutes.  It hurt.  😉  The second part did anyway.  Push-ups!!

Breakfast today!

Overnight Oats:

In the mix:

1/2 cup to 1 cup of 2% milk

1/3 cup of gluten-free oats

1 tsp of chia seeds

1 tbls of wheat berries

1/2 scoop of whey protein powder

*not shown is 1 tbls of almond butter

Directions:

Put all ingredients into a covered bowl or cup.  Stir ingredients and put into the refrigerator.  Eat the next morning.  It’s a great recovery breakfast.

Well I am off to shower, get to work and hopefully have a great day!  I guess that last part is up to me.  🙂

Question:  What about you?  Any challenges coming up this week or in the next few weeks?
