Apples, eggs and english muffins.

Hi!  How’s it going?  I am going to apologize up front for the randomness of this post.  😉   I feel like I have so much in my head and it just has to come out!

So I feel like baking all of the time now.  I mean I could go in the kitchen right now and bake cookies, a cake, a cheesecake.  Anything!  I love baking!  The problem?     I like to eat it too.  🙂   And this wouldn’t be a problem, but I sometimes can get on a roll and not stop.


Last nights sleep was pretty interesting.  Sometime around 1:30 these cats outside decided to get into a fight.  This woke me from a dead sleep!  The next thing I know I have the flashlight in hand and I am standing outside searching for the fighting cats!!  After checking on the two cats that I have outside (they are ok mom) I went back to bed, but I didn’t go right back to sleep.  I tossed a bit and then finally dozed off a couple of hours later.  I even woke up before my alarm went off, which makes for a sleepy morning.

Instead of getting my run in this morning, I did it when I came home from work.



2 mile run.

Mile One:    8.58

Total time:    18:03

Average Pace:    8.57


I felt really great on this run!

One english muffin with one cinnamon skinny cow cream cheese, half an apple and one egg







One english muffin with two slices of turkey, one slice of cheddar cheese, spinach, half an apple and…



….some Greek Yogurt.



A few hours later I grabbed another snack:

2/3 cup of cottage cheese and some grapes




Grilled chicken, steamed veggies, and some sweet potato wedges.  I also put some cheyenne pepper on the sweet potatoes and oh my word they were so good!  My mouth was completely on fire when I was finished, but it was so worth it.


I cannot believe that October is almost over!  I mean oh my word this year has gone by so fast.  Thanksgiving is coming up and then Christmas.  Wow!

What, no appetite??

Hey!    Well, I had my alarm set for 5:00 this morning and turned it right off.  I ended up getting out of bed at 5:45…  I guess I needed the extra time to sleep or something. 🙂

I used to could just roll out of bed and start working out right away, but alas I can’t do that anymore.  I have to wake up before I start doing anything.   So I opted to do my run after work today.


The work day was pretty long…. 8:15 to 6:00.  I was really ready to get home and get my run on.  I didn’t have much of an appetite today for some reason.



1 egg/egg beaters combo, 1 orange, and 1 english muffin.




I totally failed to take a picture, but I had 10 chipotle pretzel crisps.



Kale chips (made last night) and a turkey wrap.


In the wrap:  turkey slices, spinach/arugula, lettuce and guacamole.


For some reason I just could get all of this down.  As the day went on, so did my appetite.  That is…I didn’t have one.  I even brought an apple that I didn’t end up eating…



Turkey burger minus the bun, one small red potato, and some steamed veggies.


Holy cow this was so good!  Or maybe it was because I was so hungry after my run!  🙂   Well hello there appetite!  🙂



3 miles easy pace run.  I felt a little sluggish on this run, but I think that it was mainly not having a whole lot of food in my stomach.  I am really enjoying this training program that Cait has me on.  I love that I can ask her about anything running related and she doesn’t make me feel like it’s a bad question at all.  I think that is really important in a coach/trainee’s relationship.  🙂  I get texts at the perfect time and they are always encouraging!  Thank you Cait!!

I actually get to chill out in the morning!!  I go in late to work and I am so glad!  I get so much accomplished when I have more time in the morning.  I also like the quiet time.  🙂

A lil eggs and a lil banana

Hi!  You know, I can’t even sleep in on the weekend.  At 5:30 my body just woke up.  For the love of Pete!  It’s not so bad though.  The morning is when I feel most productive and I am able to catch up on some things.  I also like the quiet time.

So today is going to be a busy day!  My niece and nephew have their soccer games and then my niece is having a birthday party at one of the playgrounds nearby.  I can’t tell you how into girly stuff she is right now.  🙂  She is so beautiful!  I know that my SNL and brother will remind her that it is the heart that is the most important.




Man, I can’t tell you how long this week was to me.  And what’s worse, yesterday was just long in itself.  Lol, I told my boss that I didn’t think that I needed to be around people.  She of course just laughed.  🙂   I was totally serious though.  It was not pretty.  We were down one and it was really busy with hard stuff.  Let’s just say that it wasn’t one of those “I just need to make a deposit” kind of day.  It was more of a “something isn’t right on my account” kind of days.

I didn’t sleep the night before, so I had to wait until I got home to run.  I walked right into the house, changed into my gear, and walked right back out the door.  3.35 done.  So it’s the last week of the September Miles Madness and I was able to increase my mileage every week!  I turned in 16.01!!  The first week I turned in 8.   Thanks Cait!!!


Still have some exciting news to share with you, but it doesn’t start until Monday.  I am however, going to share it with you Sunday night.  Pretty stoked about it!



Finally picked up some spinach!!!



It’s nice and fall-ish outside today!   Maybe a bit humid, but much better than yesterday.  It was near 90!!

Peak time for everything?

Morning!!   And how is your Thursday so far??   Well, seeing is how I have only been up 30 minutes not much has happened.  I have at least had some water and coffee.

I did go to bed early last night and slept really well!   My parents are coming in today, but I am hoping to go to bed early again tonight.  Sleep is good!!

I found this online article on Yahoo Finance about: The Peak Time for Everything.    I found if very interesting!  It talks about the difference between people who get up early or sleep in and how the best time for them to function is.  I love this one….”taking a warm shower can jumpstart the morning process.” (emp mine)  There are some days that if I take a shower right when I get up, it totally wakes me up and I am good to go!


Exciting News:

So I have some really exciting news!!!!  I mean I can hardly contain myself!!   Really!!  But, this fantastic news doesn’t start until Monday.  Just know this, it is the most awesomest news EVER.




I have been having my smoothies this week, but I wanted something a little different this morning.  Well, let’s not get too crazy.  I went with an old standby: 1 egg, 1 slice of gouda cheese, 1 english muffin.  (I really need to get some spinach!!)

Aaaand, another cup of coffee.



Today I am going to take it easy.  I am enjoying the running so much, but I really don’t want to stress my body out.  It’s the final week in Team Cait’s September Miles Madness and I want to turn in as many miles as I can, but I also want to still be able to run the following week.  🙂   So far I have 12.66 to turn in.  I have one more run scheduled for the week and it should put me up to 15!    I can honestly say that I experienced my first runners high this past Sunday.  I really do think I can!  I mean that high lasted for a couple of days people!  Is that normal??? 


Question:  What time of the day do you best function?  Morning, afternoon, night-time??   I personally do my best work in the morning.  I love to get up and start my day on a positive note.   What movie was that line in???  “Tomorrow is a day without any mistakes”  I am totally paraphrasing, but it kind of goes like that.  Geeze what movie was that???!

A Gluten Free Cookie!!

Howdy folks!  Before I get to the cookie recipe, let’s get an update on all of the eats I have eaten since the last time I have posted any.  I will be honest, I have stressed a little bit over getting in a post since I have started my class.  Working 40 hours a week and then having packed weekends can lead to zero time to blog or comment on some of my favorites.  This week however, I am not going to stress.  If I can get to a post than I will, but if I have to choose between sleep or blogging, I am going to choose sleep.  🙂  No more stressing!

With that said, here are some of the eats that I have enjoyed over the past couple of days:


Overnight Oats (one of my favorites!)


Last nights dinner: Tilapia, roasted potato’s, and roasted brussels sprouts.


A new snack I found at Kroger: Clif Kid Fruit Rope/Organic and Gluten Free


This mornings breakfast: Thomas 100 Calorie English Muffin, turkey bacon, spinach, one egg/egg whites.  Holy delicious.


Lunch today: leftover roasted brussels sprouts and potato’s, brown rice, turkey sausage, and spinach.  With a tangerine on the side.


One of my favorite blogs (which reminds me, I need to update my favorites) is called Living the Gluten Free Life.  Kelsey put a Gluten free Chocolate Chip Cookie recipe up on her blog the other day that looked super yummy and interesting.  So, tonight I thought that I would give it a try. 


The verdict???    I love them!  They are super light and just melt in your mouth.  Don’t worry, I didn’t eat all three.  🙂
