I mean seriously….

Holy cow today was CRAZY!!  I mean really crazy busy.   *insert heavy sigh*  🙂   Today seemed to be jammed packed with really difficult thinking problems.  Once I would finish something, it was time for the next problem.  The one good thing?  Today just flew by to me.  So fast that the only pictures that I took today were of breakfast.

 

Breakfast:

I was really excited to try this breakfast!  That is the one of the many great things about Cait sending me a meal plan.  She only sent me a couple of days worth, but it has really got my brain juiced up to come up with some ideas for meals.

 

1 egg/egg beaters combo with spinach

1 frozen waffle

1/2 of one banana

 

Lunch today was: one slice of whole wheat bread, 6 slices of turkey slices (thin), lettuce, 6 oz of cherry greek yogurt, and some strawberries.

 

It was so busy this afternoon that I didn’t even have time for an afternoon snack!

 

 

Tonight I am just going to chill out, go to bed early, and get up in the morning and do it all over again. 🙂

 

You can’t see the tv very well, but that is Captain America!  🙂   Look at my sweat little man…

 

I almost forgot!!  Remember the September Miles Madness that I was apart of??  There were two teams of compiled runners, we ran each week and then turned in our miles at the end of each week.  Guess what?  Our team won!!  Everyone did such a great job!  Go Team Cait!

 

Welp, I am pooped.  You guys have a super night!

After lunch, it was birthday time!  For this girl….

She will be 8 tomorrow!!

 

There was lots of playing, some cupcakes, and then of course presents!

 

Looks like my brother had to get in on the action….  🙂    When my brother and I get together, we turn into 10 year olds I swear.  We were laughing so hard that I thought I was going to pee myself.  You know, that laughing where you get a bit weak??  Lol!  It makes me laugh just thinking about it!

 

I love fall.

 

I would really like it if it was a liiiittle bit cooler, but I’ll take anything over triple digits.  Even though there was overcast the entire day, it was still the perfect day for soccer games and a birthday party.

 

Workout:

20 minute upper body workout.

It’s Monday! :)

Hello people!  I hope that your day is going super!  I am currently setting at McDonald’s taking advantage of the time to get some blogging in.  I have class tonight right after work, so I won’t have time to do it once I get home.

 

I don’t know about you, but this was much-needed this morning.  For the last two nights I have slept so well.  There was no waking up off and on or any potty breaks in the night.  Which is not something that I regularly do.  I woke up this morning not really wanting to workout…..I even got into my workout clothes and sat on the bed desperately trying to talk myself out of doing it.  It didn’t work.  With class and all I will not have time to get one in tonight.  So, I got up off my behind and hopped to it!

I felt so much better once I was done!

 

Breakfast is a recycled photo seeing is how I had finished my meal and realized I hadn’t taken a picture of it.  What??!!

I had the English Muffin minus the Clementine.  I forgot those were in the refrigerator!!  I also tried something new in my coffee this morning.

Not much different from what I am currently using.  🙂

 

This was my view on my way to church yesterday:

It actually ended up being a really bad night of storms in Arkansas last night.  Yesterday morning was super cool, but by the afternoon it was near 70, which=storms.  On my way home from church last night, the lightening was SO bad!!  It was like this dance party in the sky!  Normally, storms do not scare me, but this one was freakin me out.

 

So, I am two days with no iced coffee and no mochas from McDonald’s.  If you knew me personally, you would know that this was a BIG deal.  When my mid-morning snack rolled around I was actually hungry for it. 🙂

 

I little later I will be having a turkey sandwich with some greens and a piece of 70% dark chocolate.

Chacing my tail!

After starting my class Monday and having to get back into the swing of reading and having assignments (which I have yet to get) I am starting to see how difficult it is to maintain a blog.  I don’t know about you, but I have to read in quiet.  Total quiet.  So I really don’t get to read much until it’s time to crawl into bed.  I worked till 6 p.m. tonight and then had to be somewhere right after.  I didn’t walk through the door until 7:30, which basically leaves only 2 1/2 hours of free time.  Keep in mind, I have yet to eat dinner.

It’s nearly 11 now and I am still awake.  🙂  I am almost finished with the last chapter and I will be ready for Monday nights class!

Enough ranting!!

 

Snack time today was one of my favorites…..I love eating this!

Key Lime greek yogurt and some gluten-free granola!

 

I am also having fun with my camera as you can see…:)

 

On my lunch break today, I thought that I would put my running sneakers on and see if I could get in some miles.  For time sake, I managed to do 2.62 miles and felt really good.  My pace was 8.58!

For my actual lunch I had my turkey sandwich, with veggies, provolone cheese, and some sweet and spicy bbq sauce.  Yum!

I also had one clementine and a piece of 70% dark chocolate.

 

So I got to digging around on the internet…..I wanted to see what’s the best foods to be eating right now.  Here is the list of the top 6: From WebMD

Simple and Complex carbs

Hey!   I hope your night is going well and that you have had an awesome day!  Just wanted to stop in before I finish up a chapter in my Christian Ethics book tonight.  🙂

I really tried to stay on target today with my caloric intake and proteins.  My snack today was soooooo good.  It’s something that I have had before, quite often actually, but it was good anyway!

Dannon Key Lime Pie Greek yogurt with some gluten-free granola (yum) and one Clementine.  If you haven’t picked those things up yet, you must get them!

A couple of hours later I was ready for my actual lunch.  Turkey sandwich, with lots of greens, and some tangy bbq sauce.  Grapes on the side please.

Funny story.  I found the button on my camera where you can change the “scene”…. It actually has a food scene.  I can actually get super close to my food and it doesn’t get all that fuzzy.  🙂  It’s the little things.

Since I had already eaten, I went into one of our back offices for some quiet so that I could start one of the two chapters that I have to read by next Monday.

I think I am really going to enjoy this class!  Just wanted to say “hey!” to my teacher Dr. Rusty!!  I know you read this!! 🙂

After work tonight, I headed to the track to sneak in a mile run.  The day started out at 70 degrees, it’s now 42.  The low tonight is also 32.  Arkansas weather is the craziest!

I was super hungry when I got home and couldn’t wait to try a new recipe that I had seen earlier today.  Original recipe was from a blog that I love to read called Carrots ‘N’ Cake.

Brandi’s Flatout Pizza:

1 light flat-out bread

2 slices of light provolone cheese

spinach

1/3   cup of turkey sausage

8 turkey pepperoni’s

Directions:

First, you scramble the turkey sausage.  While this is going, put the two slices of cheese onto the flat-out bread, then spinach and then turkey pepperoni.  Once the turkey sausage is done add to the top of the pizza.  When you have the pizza just the way you want it, put it into the oven, or a conventional oven, and bake until the cheese melts.  Cut and then eat!

I will definitely have this again.

This also got me thinking about simple and complex carbs.  I don’t know about you, but there are some days that all I crave is sugar and sweets.  Today was not one of those days.  I craved protein.  With that, I started to think about how our bodies work with certain foods, conditions, and sleeping habits.

Simple Carbohydrates: 

Simple carbohydrates are composed of 1 or 2 sugar units that are broken down and digested quickly, which can leave you feeling tired, hungry, and craving more sugar shortly after you’ve eaten. Recent research has shown that certain simple carbohydrate foods can cause extreme surges in blood sugar levels, which also increases insulin release. This can elevate appetite and the risk of excess fat storage.
Simple carbs are mainly added sugars, which have very little nutritional value. They are considered “empty” calories. Types of simple carbs are soda, many sweet breakfast cereals, candies, high fructose corn syrup, and more. Fruit is also considered a simple carb, but it is a naturally occurring sugar that is packed with many nutrients.

Complex Carbohydrates:

Complex carbohydrates (also referred to as starch) are made up of many sugar units and are found in both natural (brown rice) and refined (white rice) form. They are structurally more complex and take longer to be broken down and digested, which allows you to feel full longer and gives you lasting energy. Complex carbohydrate foods have been shown to enter the blood stream gradually and trigger only a moderate rise in insulin levels, which stabilizes appetite and results in fewer carbohydrates that are stored as fat.

So how do you know how to choose the right one?

Choosing the right foods isn’t always as simple as choosing complex carbohydrates over simple ones. Case in point: White bread is highly processed but is a complex carbohydrate and many fruits, which are wholesome and natural, are simple carbohydrates.  And certain foods that contain complex carbohydrates, like white potatoes, quickly raise blood sugar levels, while some foods that contain simple carbohydrates, such as whole fruit, raise blood sugar levels more slowly.
So what should you choose? Instead of labeling carbohydrates as simple or complex, look at how whole or processed the food actually is. Unrefined or whole-grain carbohydrates found in products like brown rice, whole-wheat pasta and bran cereals are digested slowly and contain vitamins, minerals and fiber which promote health. Fiber and nutrient-rich vegetables, fruits and beans, which also contain carbohydrates, also make excellent choices for health and weight loss. Try to limit your intake of highly processed, sweetened and sugary foods and choose the most wholesome and natural foods possible for your health and weight-loss goals.
